- Boneless chicken thighs
- Plain yogurt
- Garlic and ginger
- Tikka masala spice blend
- Canned tomatoes
- Coconut milk or heavy cream
- Fresh cilantro
Instructions
- Marinate chicken by mixing yogurt, garlic, ginger, and spices in a bowl. Coat diced chicken thighs and refrigerate for at least 30 minutes.
- Heat oil in a skillet over medium heat. Cook marinated chicken until browned on all sides (8-10 minutes) and set aside.
- In the same skillet, add canned tomatoes and remaining marinade; simmer for 5 minutes until thickened.
- Return chicken to the skillet, stir in coconut milk or heavy cream, and simmer for 10-15 minutes until cooked through.
- Garnish with fresh cilantro and serve with naan or rice.
