- 1 lb boneless chicken thighs
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 1 can (14 oz) whole tomatoes
- 1 cup heavy cream
- 4 tbsp butter
- Spices: cumin, coriander, garam masala
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Marinate the chicken thighs with yogurt and spices for at least 30 minutes.
- In a large pan over medium heat, melt butter and sauté onions until golden brown (5-7 minutes).
- Add minced garlic and grated ginger; cook until fragrant.
- Stir in canned tomatoes along with cumin and coriander; simmer until thickened (10-15 minutes).
- Lower heat and add heavy cream; then incorporate marinated chicken. Simmer until cooked through (15-20 minutes).
- Garnish with chopped cilantro and serve hot with naan or rice.
