Ingredients

  • 1 lb boneless chicken thighs
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 can (14 oz) whole tomatoes
  • 1 cup heavy cream
  • 4 tbsp butter
  • Spices: cumin, coriander, garam masala
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken thighs with yogurt and spices for at least 30 minutes.
  2. In a large pan over medium heat, melt butter and sauté onions until golden brown (5-7 minutes).
  3. Add minced garlic and grated ginger; cook until fragrant.
  4. Stir in canned tomatoes along with cumin and coriander; simmer until thickened (10-15 minutes).
  5. Lower heat and add heavy cream; then incorporate marinated chicken. Simmer until cooked through (15-20 minutes).
  6. Garnish with chopped cilantro and serve hot with naan or rice.
