Ingredients
- 8 oz flat rice noodles
- 3 tbsp tamarind paste
- 3 tbsp fish sauce
- 2 tbsp brown sugar
- 2 tbsp vegetable oil
- 1 cup diced tofu or chicken
- 1 cup bean sprouts
- 2 green onions (chopped)
- Fresh lime wedges (for garnish)
- Chopped peanuts (for garnish)
Instructions
- Soak the rice noodles in warm water for 20-30 minutes until soft. Drain well.
- In a bowl, mix tamarind paste, fish sauce, sugar, and a splash of water until smooth. Adjust sweetness if needed.
- Heat oil in a large pan over medium-high heat. Cook diced tofu or chicken until browned; set aside.
- Stir-fry soaked noodles with the prepared sauce for about 2 minutes until well-coated and heated through.
- Add bean sprouts and green onions; stir-fry for another minute until tender yet crunchy.
- Serve hot, garnished with chopped peanuts and lime wedges.
