Ingredients:
For the cookies
π²1 cup maida
π²1 cup atta
π²Β½ tsp baking soda
π²1 tsp baking powder
π²ΒΌ tsp cinnamon
π²ΒΌ tsp ginger powder
π²β
tsp ground cloves
π²Β½ cup softened butter
π²Β½ cup brown sugar
π²ΒΌ cup jaggery
π²1 tsp orange zest
π²1 tsp vanilla
π²3 + Β½ tbsp warm milk
For Icing
π²1 egg white
π²1.5 cups icing sugar, sifted twice
or melted white chocolate
Instructions:
1. Pre-heat the oven to 170*C
2. Cream the butter with brown sugar and jaggery until fluffy. Stir in vanilla and orange zest.
3. Add in maida, atta, baking powder, baking soda and the spices and mix well.
4. Add the warm milk (add more or less as per your dough) and mix until the dough comes together.
5. Cling wrap the dough and refrigerate for 10-15 minutes until it is tough enough to work with.
6. Roll out the dough between two sheets of parchment paper, into a ΒΌ of an inch thick base.
7. Use a cookie cutter to cut the dough into the desired shape.
8. Bake for 10-12 minutes until the edges become golden-brown. Let them cool completely before trying to lift them off the tray.
Icing-
1. Beat egg whites in a large bowl using a whisk or a spoon
2. Add sifted icing sugar, half a cup at a time. Whisk well.
3. Keep adding sugar until you achieve the desired consistency. If the icing is still runny, add more sugar.
4. Ice your cookies and let them set for 5-10 minutes. Enjoy! π
