Episode 28 of #NoOvenNoProblem ☀, a series where I make your favourite desserts at home WITHOUT an oven 💁🏻‍♂ It's #InternationalCoffeeDay today and what better way to celebrate it than with a no oven & eggless Coffee Almond Cake🥰 Made with whole wheat flour, this recipe has bold flavours of coffee topped with crunchy almonds, making it the perfect treat for all coffee lovers💁🏻‍♂️

Ingredients
1+1/2 cup milk, hot
1+1/2 tbsp instant coffee
powder
18 dates, deseeded
1/2 cup sunflower oil
1+1/4 cup whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/4 cup almonds, chopped

Method-
1. Combine 1 cup hot milk and instant coffee powder and pour it over deseeded dates. Let this sit for 15-20 mins or until dates are soft and mushy.
2. ⁠Blend milk and dates together to form a smooth mixture.
3. ⁠Transfer the mixture to a bowl, add remaining 1/2 cup milk, sunflower oil, and mix well until combined.
4. ⁠Now sift in the whole wheat flour, baking soda and baking powder and mix everything together to form a lump free batter. Do not overmix at this stage.
5. ⁠Pour the batter in a 6 inch round pan greased with oil and lined with parchment paper. Cover the top with the chopped almonds.
6. Take a cooker set over medium heat and spread a layer of salt in it. Place a stand in middle and preheat for 10 minutes.
7. ⁠Carefully place the cake pan inside the cooker and cook it for 35-40 mins or until the skewer inserted in the centre comes out clean. Let it come at room temperature before removing from the pan.
