Ingredients
- 2 ripe bananas
- 1 cup old-fashioned oats
- 2 large eggs
- 1 cup milk (or non-dairy alternative)
- 1 tsp baking powder
Instructions
- In a mixing bowl, mash the ripe bananas until smooth. Stir in the eggs and milk until well combined.
- In a separate bowl, mix the oats and baking powder.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Preheat a non-stick skillet over medium heat and lightly grease it.
- Pour about a third cup of batter for each pancake onto the skillet. Cook until bubbles form on top (about 2–3 minutes), then flip and cook until golden brown.
- Serve warm with your choice of toppings.
