- 3–4 boneless, skinless chicken breasts (1 lb)
- 1 cup mayonnaise or Greek yogurt
- 2 stalks celery, chopped
- 1 cup red grapes, halved
- 4 green onions, sliced
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
Instructions
- Boil water in a large pot. Add chicken breasts and simmer for 15-20 minutes until fully cooked. Remove from heat and let cool.
- Shred the cooled chicken using two forks.
- In a bowl, mix mayonnaise (or yogurt), lemon juice, salt, and pepper until smooth.
- In a large bowl, combine shredded chicken, celery, grapes, and green onions. Pour dressing over the mixture and stir until well combined.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled on plates or sandwiches; garnish with herbs if desired.
