- 1 cup all-purpose flour
- 2 tbsp cornstarch
- 1/2 cup plain yogurt
- 1/2 cup water (adjust as needed)
- 1 cup granulated sugar
- 1/4 tsp saffron strands
- 1/2 tsp cardamom powder
- Oil for frying
Instructions
- In a bowl, mix all-purpose flour, cornstarch, yogurt, and water until smooth. The batter should be pancake-like in consistency.
- Cover the bowl and let it rest in a warm spot for 1-2 hours to ferment.
- In a saucepan, combine sugar and water over medium heat until dissolved. Add saffron and cardamom; simmer for 8-10 minutes.
- Heat oil in a deep pan until shimmering. Test with a small amount of batter; it should sizzle.
- Fill a piping bag or squeeze bottle with batter and swirl into the hot oil to form shapes. Fry until golden brown (about 1-2 minutes).
- Soak fried jalebi in syrup for about 30 seconds before draining on paper towels. Serve hot.
