- 8 oz fettuccine pasta
- 2 large sweet yellow onions, thinly sliced
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- Fresh herbs (optional): basil or parsley
Instructions
- Prepare your ingredients by slicing onions and mincing garlic.
- In a large skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 20 minutes).
- Add minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
- Meanwhile, cook fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- Combine the drained pasta with the caramelized onions and garlic in the skillet. Gradually add reserved pasta water to create a creamy sauce.
- Stir in grated Parmesan cheese and season with salt and pepper. Toss until well combined and serve immediately.
