- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 cups mixed greens (spinach, arugula, spring mix)
- 1 cup fresh strawberries, sliced
- 1 cup fresh blueberries
- 2 tbsp extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat and lightly oil the grates.
- Pat the chicken breasts dry and rub them with olive oil, salt, and pepper.
- Grill the chicken for 6-7 minutes per side until the internal temperature reaches 165°F (75°C). Let rest for five minutes before slicing.
- In a large bowl, combine mixed greens and toss with sliced strawberries and blueberries.
- In a small bowl, whisk together balsamic vinegar, honey, salt, and pepper for dressing.
- Add sliced chicken on top of the salad and drizzle with dressing before serving.
