- 2 lbs russet or Yukon gold potatoes, chopped
- 12 oz smoked sausage (like kielbasa), sliced
- 1 oz ranch seasoning mix
- 2 cups sharp cheddar cheese, shredded
- 2 tbsp olive oil
- Fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- In the baking dish, toss chopped potatoes with olive oil and ranch seasoning until well coated.
- Add sliced smoked sausage and mix gently to combine.
- Spread the mixture evenly in the dish and bake for about 30 minutes or until potatoes are fork-tender and golden brown, stirring halfway through.
- Remove from oven, sprinkle cheese on top, and return to bake for an additional 5 minutes or until melted.
- Garnish with fresh parsley before serving.
