Ingredients
- 1 lb boneless skinless chicken breasts
- 3 bell peppers (red, yellow, green), sliced
- 1 medium onion, sliced
- 2 tbsp taco seasoning
- 2 tbsp olive oil
- 1/2 cup Greek yogurt
- Juice of 1 lime
Instructions
- Preheat a large skillet over medium-high heat and add olive oil.
- Season the chicken breasts with taco seasoning and cook for about 6 minutes on each side until fully cooked (165°F internal temperature). Remove and let rest.
- In the same skillet, sauté sliced bell peppers and onion until tender (about 5 minutes).
- Slice the rested chicken and return it to the skillet, mixing everything together for an additional minute.
- Serve in bowls topped with Greek yogurt and fresh lime juice.
