- 2 pounds boneless chicken thighs
- 1 red bell pepper
- 1 medium yellow onion
- 1 zucchini
- ¼ cup extra virgin olive oil
- Juice of 2 lemons
- 1 teaspoon cumin powder
- Salt and pepper to taste
Instructions
- In a bowl, mix olive oil, lemon juice, cumin powder, salt, and pepper to create the marinade.
- Cut chicken into bite-sized pieces and add to the marinade. Cover and refrigerate for at least one hour (or overnight).
- Chop the bell pepper, onion, and zucchini into similar-sized chunks.
- Thread the marinated chicken and vegetables onto skewers alternately.
- Preheat grill to medium-high heat (400°F). Grill skewers for about 10-15 minutes until chicken reaches an internal temperature of 165°F.
