Ingredients
- 1 cup cooked rice (preferably leftover)
 - 2 large eggs
 - 2 tablespoons vegetable oil
 - Salt and pepper to taste
 - Chopped green onions (optional)
 
Instructions
- If you don’t have cooked rice, prepare 1 cup of white or brown rice according to package instructions.
 - Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium-high heat until shimmering.
 - Crack the eggs into the pan and fry until the edges are crispy; season with salt and pepper.
 - Once cooked to your liking, place the egg on top of a serving of warm rice.
 - Garnish with chopped green onions if desired.
