- 1 lb lean ground beef
- 4 cups chopped green cabbage
- 1 medium onion, finely chopped
- 2 medium carrots, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp tomato paste (double concentrated)
- 4 cups low-sodium beef broth
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper (adjust to taste)
- 1 tsp dried thyme
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and carrots; sauté until soft and onions are translucent.
- Stir in minced garlic and tomato paste; cook for about 2 minutes until fragrant.
- Add ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 5–7 minutes. Drain excess fat if necessary.
- Fold in chopped cabbage and pour in beef broth. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
- Season with salt, pepper, and thyme to taste before serving.
