- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 2 medium carrots, chopped
- 1 cup frozen peas
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 package cheddar bay biscuit mix (about 7.5 oz)
- 4 tbsp butter, melted
Instructions
- Preheat oven to 400°F (200°C).
- Dice chicken into bite-sized pieces. Sauté garlic and carrots in olive oil until tender, then add chicken until browned.
- Stir in chicken broth and heavy cream; simmer until slightly thickened.
- Add frozen peas; season with salt and pepper.
- Prepare cheddar bay biscuits according to package instructions.
- Pour creamy filling into a baking dish, top with biscuits, and brush with melted butter.
- Bake for about 20 minutes or until biscuits are golden brown and filling is bubbly.
