- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh broccoli florets
- 1 cup uncooked long-grain rice
- 2 cups shredded cheddar and mozzarella cheese blend
- 2 cups low-sodium chicken broth
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a large baking dish.
- In a skillet over medium heat, cook seasoned chicken breasts until golden brown, about 6-7 minutes per side.
- In a bowl, combine uncooked rice and chopped broccoli, then layer in the greased baking dish with the cooked chicken on top.
- Mix cheese, chicken broth, onion powder, garlic powder, salt, pepper, and paprika in a separate bowl. Pour this mixture over the layered ingredients.
- Cover with foil and bake for about 30 minutes; then remove the foil and bake an additional 10-15 minutes until bubbly and golden brown.
