  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup seasoned breadcrumbs
  • 1 cup frozen peas or corn (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the chicken until golden brown (6-7 minutes per side). Remove and set aside.
  3. Sauté chopped onions and minced garlic in the same skillet until soft (3-5 minutes).
  4. In a large bowl, combine shredded chicken, cream of chicken soup, sautéed onions and garlic, shredded cheese, and optional vegetables. Mix well.
  5. Pour mixture into the prepared baking dish. Top with breadcrumbs and extra cheese if desired.
  6. Bake for 25-30 minutes until bubbly and golden brown.
