- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 1 medium onion, chopped
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 cup seasoned breadcrumbs
- 1 cup frozen peas or corn (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large skillet over medium heat, cook the chicken until golden brown (6-7 minutes per side). Remove and set aside.
- Sauté chopped onions and minced garlic in the same skillet until soft (3-5 minutes).
- In a large bowl, combine shredded chicken, cream of chicken soup, sautéed onions and garlic, shredded cheese, and optional vegetables. Mix well.
- Pour mixture into the prepared baking dish. Top with breadcrumbs and extra cheese if desired.
- Bake for 25-30 minutes until bubbly and golden brown.
