- 3 medium boneless, skinless chicken breasts (about 1 lb)
- 9 oz fresh or frozen cheese tortellini
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped chicken, seasoning with salt and pepper; cook until browned (5-7 minutes).
- Stir in minced garlic for about 30 seconds until fragrant. Pour in chicken broth.
- Add tortellini and simmer according to package instructions (8-10 minutes). Stir in spinach just before serving until wilted.
- Remove from heat, sprinkle with Parmesan cheese, and stir until melted. Serve warm.
