- Salt and pepper to taste
- 1 tsp dried thyme or Italian seasoning
Instructions
- Dice the chicken breasts into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
- Add diced chicken, seasoning with salt, pepper, and herbs. Cook until golden brown.
- Pour in chicken broth and stir in rice; bring to a gentle boil.
- Reduce heat, add heavy cream and frozen vegetables. Simmer covered for 15-20 minutes until rice is fluffy.
- Taste-test and adjust seasoning as needed before serving.
