- 1 lb lean ground turkey
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 cup bell peppers, diced (any color)
- 1 can (28 oz) crushed tomatoes
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
- Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado
Instructions
- Gather your tools: large pot or Dutch oven, cutting board, sharp knife, wooden spoon.
- Heat olive oil over medium heat in the pot. Sauté chopped onions and bell peppers for about 5 minutes until soft.
- Add ground turkey to the pot; break it up with a spoon and cook until no pink remains (about 6-8 minutes).
- Stir in minced garlic, chili powder, and cumin; cook for an additional 1-2 minutes until fragrant.
- Add kidney beans, black beans, and crushed tomatoes; stir well to combine.
- Bring the mixture to a gentle boil then reduce heat to low. Simmer uncovered for 20-30 minutes.
- Taste the chili and adjust seasonings as needed before serving.
- Serve warm with optional toppings.
