  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado

Instructions

  1. Gather your tools: large pot or Dutch oven, cutting board, sharp knife, wooden spoon.
  2. Heat olive oil over medium heat in the pot. Sauté chopped onions and bell peppers for about 5 minutes until soft.
  3. Add ground turkey to the pot; break it up with a spoon and cook until no pink remains (about 6-8 minutes).
  4. Stir in minced garlic, chili powder, and cumin; cook for an additional 1-2 minutes until fragrant.
  5. Add kidney beans, black beans, and crushed tomatoes; stir well to combine.
  6. Bring the mixture to a gentle boil then reduce heat to low. Simmer uncovered for 20-30 minutes.
  7. Taste the chili and adjust seasonings as needed before serving.
  8. Serve warm with optional toppings.
