Instructions

  1. In a large pot over medium heat, add a splash of olive oil and sauté the chopped onion until soft and translucent (about 5 minutes).
  2. Add the ground turkey to the pot, breaking it apart as it cooks until no longer pink (around 6 minutes).
  3. Stir in the minced garlic and sauté for another minute until fragrant.
  4. Add sliced carrots, chopped celery, crushed tomatoes, and chicken broth; stir to combine.
  5. Season with salt, pepper, Italian seasoning, and red pepper flakes if desired. Bring to a gentle simmer.
  6. Reduce heat to low and cover the pot; let simmer for 20-30 minutes to meld flavors.
