- 1 lb ground turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 stalks celery, chopped
- 1 (14 oz) can crushed tomatoes
- 4 cups low-sodium chicken broth
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- Fresh herbs (basil or parsley) for garnish (optional)
Instructions
- In a large pot over medium heat, add a splash of olive oil and sauté the chopped onion until soft and translucent (about 5 minutes).
- Add the ground turkey to the pot, breaking it apart as it cooks until no longer pink (around 6 minutes).
- Stir in the minced garlic and sauté for another minute until fragrant.
- Add sliced carrots, chopped celery, crushed tomatoes, and chicken broth; stir to combine.
- Season with salt, pepper, Italian seasoning, and red pepper flakes if desired. Bring to a gentle simmer.
- Reduce heat to low and cover the pot; let simmer for 20-30 minutes to meld flavors.
- Serve hot with bread or salad.
