- 28 oz crushed tomatoes
- 4 cups low-sodium beef broth
- 2 tsp Italian seasoning
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil (optional), for garnish
Instructions
- In a large pot, heat 2 tbsp olive oil over medium heat. Sauté the chopped onions until soft and fragrant (about 5 minutes).
- Add ground beef and minced garlic; cook until browned while breaking up lumps (7-10 minutes).
- Stir in crushed tomatoes and beef broth; mix well.
- Season with Italian seasoning, salt, and pepper; let simmer for 15 minutes.
- Add broken lasagna noodles; cook according to package instructions (about 8-10 minutes).
- In a bowl, mix ricotta cheese with herbs; set aside.
- Serve soup topped with mozzarella cheese and optional fresh basil.
