  • 1 lb lean ground beef
  • 1 cup plain breadcrumbs
  • 1 large egg
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp butter
  • ½ cup heavy cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, soy sauce, parsley, oregano, salt, and pepper until just combined.
  3. Shape the mixture into golf-sized meatballs and place them on a lined baking sheet.
  4. Heat olive oil in a skillet over medium-high heat. Brown meatballs on all sides for about 6-8 minutes.
  5. Transfer the browned meatballs to the oven and bake for an additional 15-20 minutes until cooked through.
  6. Boil the Yukon Gold potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter and cream until smooth.
  7. Serve meatballs over mashed potatoes with extra gravy if desired.
