- 1 lb lean ground beef
- 1 cup plain breadcrumbs
- 1 large egg
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 lbs Yukon Gold potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup heavy cream
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, soy sauce, parsley, oregano, salt, and pepper until just combined.
- Shape the mixture into golf-sized meatballs and place them on a lined baking sheet.
- Heat olive oil in a skillet over medium-high heat. Brown meatballs on all sides for about 6-8 minutes.
- Transfer the browned meatballs to the oven and bake for an additional 15-20 minutes until cooked through.
- Boil the Yukon Gold potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter and cream until smooth.
- Serve meatballs over mashed potatoes with extra gravy if desired.
