- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz spaghetti
- 1 cup diced bell peppers (mixed colors)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 8 oz cream cheese
- 1 cup low-sodium chicken broth
- ½ cup freshly grated Parmesan cheese
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Prep Ingredients: Chop chicken into bite-sized pieces. Dice the onion and bell peppers, and mince the garlic.
- Cook Pasta: Boil salted water in a large pot. Add spaghetti and cook until al dente, then drain.
- Sauté Veggies & Chicken: In a skillet over medium heat, heat olive oil. Sauté onions until translucent, add bell peppers until soft, then add chicken seasoned with salt and pepper. Cook until chicken is done.
- Add Garlic & Cream Cheese: Stir in minced garlic for about 1 minute. Lower heat; add cream cheese and chicken broth, stirring until melted and smooth.
- Combine & Serve: Gently fold in cooked spaghetti along with Italian seasoning and Parmesan cheese until well coated with sauce.
