  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz spaghetti
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese
  • 1 cup low-sodium chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prep Ingredients: Chop chicken into bite-sized pieces. Dice the onion and bell peppers, and mince the garlic.
  2. Cook Pasta: Boil salted water in a large pot. Add spaghetti and cook until al dente, then drain.
  3. Sauté Veggies & Chicken: In a skillet over medium heat, heat olive oil. Sauté onions until translucent, add bell peppers until soft, then add chicken seasoned with salt and pepper. Cook until chicken is done.
  4. Add Garlic & Cream Cheese: Stir in minced garlic for about 1 minute. Lower heat; add cream cheese and chicken broth, stirring until melted and smooth.
  5. Combine & Serve: Gently fold in cooked spaghetti along with Italian seasoning and Parmesan cheese until well coated with sauce.
