Instructions
- Slice the onions thinly and melt butter in a large pot over medium heat. Add onions and sauté until golden brown (about 20 minutes).
- Stir in thyme and cook for another minute to release aromatic oils.
- Pour in beef broth and let simmer for 15 minutes to meld flavors.
- Toast baguette slices until golden brown.
- Ladle soup into oven-safe bowls, top with toasted baguette slices and cheese, then broil until bubbly (3-5 minutes).
