- 1 cup dried red kidney beans (soaked overnight)
- 1 cup long-grain rice
- 1 medium yellow onion (finely chopped)
- 1 green bell pepper (chopped)
- 2 stalks celery (diced)
- 4 cloves garlic (minced)
- 2 tsp Cajun seasoning
- 4 cups low-sodium vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Rinse soaked red beans under cold water and drain.
- Heat olive oil in a large pot over medium heat. Sauté onions, bell pepper, celery, and garlic until soft, about 5 minutes.
- Stir in Cajun seasoning, salt, and pepper; cook for another minute.
- Add beans and vegetable broth; bring to a gentle boil, then reduce heat to low and simmer for about 45 minutes until beans are tender.
- Cook the rice according to package instructions while the beans simmer.
- Serve the beans over the cooked rice, garnishing as desired.
