- 6 cloves fresh garlic
- 1 large sweet onion
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream
- 3 sprigs fresh thyme
- 2 tbsp butter
- Crusty bread or baguette for serving
Instructions
- Gather and chop garlic and onion.
- In a large pot over medium heat, melt butter. Add chopped onions and garlic; sauté until golden brown.
- Pour in vegetable broth and add thyme. Simmer for 20 minutes.
- Remove from heat; blend soup until smooth using an immersion blender.
- Stir in heavy cream, adjust seasoning if needed, then serve hot with crusty bread.
