- 3–4 boneless, skinless chicken breasts
- 1 cup long grain rice
- 2 cups low-sodium chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 2 cups frozen mixed vegetables
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Spray a 9×13-inch baking dish with nonstick cooking spray.
- In a large bowl, mix uncooked rice, mixed vegetables, cream of chicken soup, chicken broth, onion powder, garlic powder, salt, and pepper until well combined.
- Layer seasoned chicken breasts on top of the mixture.
- Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes until golden brown.
- Let sit for 5 minutes before serving.
