  • 34 boneless, skinless chicken breasts
  • 1 cup long grain rice
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups frozen mixed vegetables
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray a 9×13-inch baking dish with nonstick cooking spray.
  3. In a large bowl, mix uncooked rice, mixed vegetables, cream of chicken soup, chicken broth, onion powder, garlic powder, salt, and pepper until well combined.
  4. Layer seasoned chicken breasts on top of the mixture.
  5. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes until golden brown.
  6. Let sit for 5 minutes before serving.
