- 1 lb lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium Yukon Gold potatoes, diced
- 4 cups low-sodium beef broth
- 1 cup shredded sharp cheddar cheese
- 1 cup whole milk or heavy cream
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- Optional: crispy bacon bits for topping
Instructions
- In a skillet over medium heat, brown the ground beef with chopped onions and minced garlic until cooked through. Drain excess fat.
- Transfer the mixture to your crockpot. Add diced potatoes, sliced carrots, beef broth, salt, pepper, and paprika. Stir well.
- Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
- When ready to serve, stir in milk or cream along with shredded cheese until melted and creamy.
- Ladle into bowls and top with optional bacon bits or fresh herbs if desired.
