- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 2 medium Yukon Gold potatoes, diced
- 1 can (14.5 oz) diced tomatoes with juice
- 4 cups low-sodium beef broth
- 2 tsp Italian seasoning
- Salt & pepper to taste
Instructions
- In a large pot over medium heat, sauté chopped onions in olive oil until translucent. Add minced garlic and cook until fragrant.
- Add the ground beef and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain excess fat if needed.
- Stir in diced carrots, celery, and potatoes; cook for 3-4 minutes.
- Add diced tomatoes with juice and beef broth; bring to a gentle boil while stirring occasionally (about 5 minutes).
- Season with Italian seasoning, salt, and pepper; lower the heat and simmer for 20-30 minutes.
