- 9 oz fresh or frozen tortellini (cheese or meat-filled)
- 4 cups low-sodium vegetable broth
- 2 cups fresh spinach
- 1 can (14.5 oz) diced tomatoes
- 1 onion (finely chopped)
- 3 cloves garlic (minced)
- 2 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot over medium heat, drizzle olive oil and sauté chopped onions and minced garlic until soft and fragrant, about 3 minutes.
- Add crumbled Italian sausage to the pot, cooking until browned.
- Mix in diced tomatoes and vegetable broth; bring to a gentle boil.
- Stir in tortellini and cook according to package instructions until tender.
- Add fresh spinach and stir until wilted. Season with salt, pepper, and additional Italian seasoning as desired.
- Serve hot, garnished with grated Parmesan cheese if desired.
