Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 28 oz can crushed tomatoes
  • 4 cups beef broth
  • 2 cups small pasta (shells or ditalini)
  • 2 tsp Italian seasoning
  • 4 cups fresh spinach
  • 4 oz cream cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes), then add garlic and cook for another minute.
  2. Increase heat slightly and add ground beef; break apart with a spoon and cook until browned (6-8 minutes). Drain excess grease if necessary.
  3. Stir in crushed tomatoes and beef broth; bring to a simmer.
  4. Add pasta and cook according to package instructions (8-10 minutes), stirring occasionally.
  5. In the last few minutes, stir in spinach until wilted, followed by cream cheese until melted.
  6. Mix in mozzarella just before serving and garnish with Parmesan.
