- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 28 oz can crushed tomatoes
- 4 cups beef broth
- 2 cups small pasta (shells or ditalini)
- 2 tsp Italian seasoning
- 4 cups fresh spinach
- 4 oz cream cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes), then add garlic and cook for another minute.
- Increase heat slightly and add ground beef; break apart with a spoon and cook until browned (6-8 minutes). Drain excess grease if necessary.
- Stir in crushed tomatoes and beef broth; bring to a simmer.
- Add pasta and cook according to package instructions (8-10 minutes), stirring occasionally.
- In the last few minutes, stir in spinach until wilted, followed by cream cheese until melted.
- Mix in mozzarella just before serving and garnish with Parmesan.
