- 1 lb Italian sausage
- 4 medium Yukon Gold potatoes, diced
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 tbsp fresh parsley, chopped
Instructions
- In a large pot over medium heat, sauté onions and garlic in olive oil until fragrant (about 3-4 minutes).
- Add crumbled sausage; cook until browned.
- Stir in diced potatoes and cover with chicken broth. Bring to a boil, then reduce heat to simmer.
- After about 20 minutes or until potatoes are tender, mix in heavy cream, salt, pepper, thyme, and parsley.
- Simmer for an additional 5-10 minutes until thickened. Adjust seasonings as desired before serving.
