- 1 lb ground turkey
- 1 can (15 oz) fire-roasted diced tomatoes
- 1 cup chopped bell peppers (mixed red and green)
- 1 large yellow onion, chopped
- 3 garlic cloves, minced
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 can (15 oz) kidney beans, drained and rinsed
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
- Add ground turkey; cook until browned, about 5-7 minutes.
- Stir in bell peppers, chili powder, and cumin; cook for another 3 minutes.
- Pour in diced tomatoes with juices and add kidney beans; stir well.
- Bring to a gentle boil, then reduce heat and simmer uncovered for 30-40 minutes until thickened.
- Season with salt and pepper to taste before serving hot.
