  • 1 can (15 oz) fire-roasted diced tomatoes
  • 1 cup chopped bell peppers (mixed red and green)
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
  2. Add ground turkey; cook until browned, about 5-7 minutes.
  3. Stir in bell peppers, chili powder, and cumin; cook for another 3 minutes.
  4. Pour in diced tomatoes with juices and add kidney beans; stir well.
  5. Bring to a gentle boil, then reduce heat and simmer uncovered for 30-40 minutes until thickened.
  6. Season with salt and pepper to taste before serving hot.
