- 8 oz penne pasta
- 4 cups chopped romaine lettuce
- 1/2 cup Caesar dressing
- 1/2 cup freshly grated Parmesan cheese
- 1 cup croutons
- Juice of 1 lemon
- Freshly cracked pepper to taste
- 2 tbsp olive oil
Instructions
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Stir occasionally.
- Meanwhile, rinse and chop the romaine lettuce into bite-sized pieces.
- Once cooked, drain the pasta and rinse under cold water to stop cooking.
- In a large bowl, combine cooled pasta with romaine lettuce. Drizzle Caesar dressing over the top and toss until well coated.
- Add freshly grated Parmesan, croutons, lemon juice, and pepper; mix gently to combine.
- Serve immediately for maximum freshness.
