  • 8 oz penne pasta
  • 4 cups chopped romaine lettuce
  • 1/2 cup Caesar dressing
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup croutons
  • Juice of 1 lemon
  • Freshly cracked pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Stir occasionally.
  2. Meanwhile, rinse and chop the romaine lettuce into bite-sized pieces.
  3. Once cooked, drain the pasta and rinse under cold water to stop cooking.
  4. In a large bowl, combine cooled pasta with romaine lettuce. Drizzle Caesar dressing over the top and toss until well coated.
  5. Add freshly grated Parmesan, croutons, lemon juice, and pepper; mix gently to combine.
  6. Serve immediately for maximum freshness.
