- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 2 tablespoons Cajun seasoning
- 8 oz penne pasta
- 1 cup heavy cream
- 2 cups low-sodium chicken broth
- 1 cup freshly grated Parmesan cheese
- 1 cup bell peppers, chopped
- 1 cup onions, chopped
- 8 oz cream cheese
- 2 tablespoons olive oil
- 2 green onions, chopped (for garnish)
Instructions
- Chop bell peppers and onions into bite-sized pieces.
- Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers for about 5-7 minutes until softened.
- Add chicken breasts and Cajun seasoning to the skillet; cook until golden brown on all sides.
- Transfer the mixture to the crock pot. Pour in chicken broth and heavy cream; stir gently.
- Add uncooked penne pasta to the crock pot. Cover and cook on low for 3-4 hours until pasta is tender and chicken is cooked through.
- Stir in cream cheese and Parmesan until melted and creamy. Adjust seasoning as needed before serving.
