  • 1 cup heavy cream

  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 8 oz cream cheese
  • 2 tablespoons olive oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Chop bell peppers and onions into bite-sized pieces.
  2. Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers for about 5-7 minutes until softened.
  3. Add chicken breasts and Cajun seasoning to the skillet; cook until golden brown on all sides.
  4. Transfer the mixture to the crock pot. Pour in chicken broth and heavy cream; stir gently.
  5. Add uncooked penne pasta to the crock pot. Cover and cook on low for 3-4 hours until pasta is tender and chicken is cooked through.
