- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 3–4 cloves fresh garlic, minced
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prep your ingredients by dicing the chicken and chopping the garlic.
- In a large skillet, heat olive oil over medium heat. Add diced chicken, seasoning with salt and pepper; cook until golden brown and cooked through (6-8 minutes).
- Stir in minced garlic during the last minute of cooking, then add fresh spinach until wilted.
- Pour in heavy cream and gradually stir in Parmesan cheese until melted.
- Meanwhile, boil pasta according to package instructions; drain while reserving some pasta water.
- Combine cooked pasta with the creamy mixture in the skillet, adding reserved pasta water as needed for desired consistency.
