Instructions
- In a bowl, whisk together the eggs and cottage cheese until smooth.
- Season with salt and pepper.
- Heat a non-stick skillet over medium-low heat and add butter or olive oil until melted.
- Pour in the egg mixture and let sit undisturbed for 30 seconds.
- Stir gently with a spatula from the edges toward the center until soft curds form.
- Just before serving, fold in freshly chopped chives.
