- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients: mince the garlic and wash the spinach.
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper; sear until golden brown (about 6 minutes per side). Remove from the skillet.
- Reduce heat; add minced garlic to the skillet and sauté until fragrant (about 30 seconds). Stir in spinach until wilted.
- Pour in heavy cream and chicken broth, scraping browned bits from the pan. Gradually stir in Parmesan cheese until melted.
- Return chicken to the skillet, allowing it to soak up the sauce for a few minutes before serving.
