- 2 lbs Yukon Gold potatoes
- 6 cloves fresh garlic
- ½ cup unsalted butter
- ½ cup heavy cream (or milk)
- Salt and pepper to taste
- Chives or parsley (optional, for garnish)
Instructions
- Peel and chop the Yukon Gold potatoes into even chunks. Place them in a large pot filled with cold water.
- Bring water to a boil over medium-high heat. Add salt and cook potatoes until fork-tender, about 15-20 minutes.
- Meanwhile, wrap peeled garlic cloves in aluminum foil with a drizzle of olive oil and roast at 400°F (200°C) for 20-25 minutes until soft.
- Drain the cooked potatoes and return them to the pot. Add roasted garlic and unsalted butter.
- Pour in heavy cream while mashing until smooth. Season with salt and pepper to taste.
- Transfer to a serving bowl and garnish with chopped chives or parsley if desired.
