Ingredients

  • 2 lbs Yukon Gold potatoes
  • 6 cloves fresh garlic
  • ½ cup unsalted butter
  • ½ cup heavy cream (or milk)
  • Salt and pepper to taste
  • Chives or parsley (optional, for garnish)

Instructions

  1. Peel and chop the Yukon Gold potatoes into even chunks. Place them in a large pot filled with cold water.
  2. Bring water to a boil over medium-high heat. Add salt and cook potatoes until fork-tender, about 15-20 minutes.
  3. Meanwhile, wrap peeled garlic cloves in aluminum foil with a drizzle of olive oil and roast at 400°F (200°C) for 20-25 minutes until soft.
  4. Drain the cooked potatoes and return them to the pot. Add roasted garlic and unsalted butter.
  5. Pour in heavy cream while mashing until smooth. Season with salt and pepper to taste.
  6. Transfer to a serving bowl and garnish with chopped chives or parsley if desired.
