- 4 cod fillets (6 oz each)
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes (oil-packed, chopped)
- 1 cup heavy cream
- 3 garlic cloves (minced)
- 1/2 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Prep your ingredients: Rinse spinach and pat dry.
- Sauté garlic and sun-dried tomatoes in olive oil over medium heat until fragrant (about 1-2 minutes).
- Add spinach; cook until wilted (about 3 minutes). Pour in heavy cream and stir to combine.
- Nestle cod fillets into the skillet, season with salt, pepper, and lemon juice. Cover and simmer for 10-12 minutes until cooked through.
- Sprinkle Parmesan cheese on top before serving.
