Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup orzo pasta
- 1 cup freshly grated Parmesan cheese
- 1 cup heavy cream
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 2 cups fresh baby spinach
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients: Measure out all ingredients and chop the garlic.
- Sear the chicken: In a large skillet over medium-high heat, heat the olive oil. Add chicken breasts and cook until golden brown on both sides (about 5-7 minutes per side). Remove from skillet.
- Add garlic and orzo: Stir in minced garlic until fragrant (about 1 minute), then add orzo, coating it with the flavors.
- Combine broth and cream: Pour in chicken broth and heavy cream; bring to a gentle simmer for about 10-12 minutes until orzo absorbs most of the liquid.
- Melt cheese and add spinach: Stir in Parmesan cheese until melted, then fold in fresh spinach until wilted.
- Season and serve: Adjust seasoning with salt and pepper as needed. Serve hot with extra Parmesan on top.
