- 4 boneless, skinless chicken breasts
- 4 cups fresh baby spinach
- 1 cup chopped artichoke hearts (canned or frozen)
- 8 oz cream cheese (full-fat)
- 1 cup shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 4 garlic cloves (minced)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Optional: Red pepper flakes for added heat
Instructions
- Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, and olive oil.
- Sear chicken in an oven-safe skillet over medium heat until golden brown on both sides (about 5 minutes per side). Set aside.
- In the same skillet, sauté minced garlic until fragrant (about 1 minute). Stir in cream cheese until smooth.
- Add chopped artichokes and spinach; cook until spinach wilts (about 2-3 minutes).
- Return seared chicken to skillet, top with mozzarella and Parmesan cheeses, then bake for 20 minutes or until bubbly and golden.
