- 8 oz bowtie pasta
- 2 ears fresh corn
- 1/2 cup finely diced red onion
- 1/2 cup chopped bell peppers (mix of red and yellow)
- 1/4 cup chopped cilantro
- Juice of 1 lime
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente, then drain and rinse under cold water.
- Cut the kernels off the corn and sauté in a skillet over medium heat until slightly charred (about 5 minutes).
- In a large mixing bowl, combine cooked pasta, sautéed corn, red onion, bell peppers, and cilantro.
- In a separate bowl, whisk together sour cream, mayonnaise, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the pasta mixture and gently fold until well-combined.
- Cover and refrigerate for at least one hour before serving.
