- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet.
- Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Pour in heavy cream, bring to a simmer, stir in sun-dried tomatoes and Italian seasoning; thicken for 3-5 minutes.
- Add fresh spinach and stir until wilted.
- Return chicken to the skillet, ensuring it is coated with sauce. Heat through for an additional 2 minutes.
- Serve hot, garnished with grated Parmesan cheese.
