Ingredients
- 3–4 boneless skinless chicken breasts
- 2 cups fresh spinach
- ½ cup sun-dried tomatoes (packed in oil)
- 1 cup heavy cream
- 3 garlic cloves (minced)
- 1 tsp dried Italian herbs (basil, oregano, thyme)
- Olive oil for cooking
- Salt and pepper to taste
Instructions
- Season both sides of chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, sauté minced garlic for about one minute until fragrant. Stir in sun-dried tomatoes and heavy cream; bring to a gentle simmer.
- Add fresh spinach and stir until wilted.
- Return chicken to the skillet, spoon sauce over it, and let simmer for another three minutes.
- Serve hot with extra sauce drizzled on top.
