- 1 can (15 oz) cannellini beans, drained and rinsed
- 2 cloves fresh garlic, minced
- 2 tbsp freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil (plus additional for drizzling)
- 1 tsp fresh thyme leaves
- 1 tsp fresh rosemary, chopped
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Drain and rinse cannellini beans under cold water.
- In a food processor, combine the beans, garlic, lemon juice, olive oil, thyme, rosemary, salt, and pepper. Blend until smooth.
- Taste and adjust seasoning if necessary.
- For extra creaminess, blend in additional olive oil.
- Transfer to a serving bowl and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled with pita chips or fresh veggies.
