- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cans (15 oz each) great northern or cannellini beans, drained
- 1 can (4 oz) diced green chiles (mild or hot)
- 4 cups low-sodium chicken broth
- 2 tsp cumin
- 2 tsp chili powder
- 1/4 cup fresh cilantro, chopped (for garnish)
- 1 cup sour cream or Greek yogurt (for serving)
Instructions
- Chop chicken breasts into bite-sized pieces.
- Place chopped chicken in the slow cooker with drained beans, green chiles, cumin, and chili powder. Stir to combine.
- Pour low-sodium chicken broth over the mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred any large chunks of chicken in the pot and stir in fresh cilantro.
- Serve hot with a dollop of sour cream or Greek yogurt.
