- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup fresh parsley, chopped
- 2 garlic cloves, minced
- 2 tsp cumin powder
- 1 tsp chili powder
- 1/4 cup all-purpose flour
- 2 tbsp olive oil (plus more for drizzling)
- 2 tbsp lemon juice
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it.
- In a large bowl, mash the chickpeas with garlic, parsley, cumin, chili powder, and lemon juice until mostly smooth but slightly textured.
- Gradually stir in flour until the mixture is sticky yet manageable; adjust with more flour if too wet.
- Form small balls (1-2 inches in diameter) and place them on the baking sheet with space in between.
- Drizzle each ball lightly with olive oil and bake for 20-25 minutes until golden brown, flipping halfway through.
